Chili Lime Tofu Wrap

Ingredients
  • 1 pkg. extra firm tofu (drained and cut into cubes or slices)
  • 1 cup brown rice
  • 1 tbsp. ginger garlic stir fry oil (olive oil will work too)
  • 1 lime
  • 1 pkg. tortillas
  • some Braggs liquid aminos, to taste (if you can't find this, you can just use soy sauce)
  • some garlic powder, to taste
  • some pepper, to taste
  • some Sambal Oelek chili sauce, to taste
Instructions
  1. Boil your rice. The ratio is 2 cups of water for every cup of rice—combine the water and rice in a medium pot and let boil.
  2. Once it's boiling, cover it with a lid and lower your heat. It should boil lightly until most of the water is gone or until the rice is soft—this usually takes about 25-30 minutes depending on what kind of rice you're using.
  3. While your rice is cooking, grab a medium-sized pan and throw in the oil.
  4. Throw your chopped tofu in and coat with garlic powder on both sides. You can also add some pepper now.
  5. Cook your tofu until it's browned on both sides, adding more oil if it sticks. Make sure to also squeeze your lime juice onto the tofu as it cooks and stir in some soy sauce or Braggs to taste.
  6. When your tofu and rice are done, grab a tortilla and wrap it loosely in paper towel. Dampen the paper towel with some water and throw it in the microwave for about 20-30 seconds—this will steam your tortilla and make it soft and delish!
  7. Put all of your ingredients (tofu, brown rice, and the rest of your lime juice) into the tortilla and scoop on some chili sauce. Wrap it up and eat!
