Ingredients
  • 8 slices bread, toasted
  • 1 pkg. extra firm tofu, drained
  • 1/2 cup vegan mayo
  • 1 1/2 Tbsp. Dijon mustard
  • 1/4 tsp. turmeric (for the yellowy color)
  • 2 or 3 stalks green onion, chopped
  • 1/4 cup relish
  • some salt, to taste
  • some pepper, to taste
Instructions
  1. Grab a bowl and mash the tofu with a fork.
  2. Add in all the other ingredients (except the bread, of course), and mix well.
  3. Take two slices of bread and spread some of the mixture on one slice, then top with the other slice.
  4. Repeat until you've used up all your eggless egg salad mixture and enjoy!
