1. To make the guac, mash up the avocado in a bowl and add the 2 tablespoons of lime juice. Set that to the side for a minute. 2. Next, combine the chopped tomato, onion, garlic, jalapeño (optional), and oil. Stir those ingredients together and then mix in the avocado. Place the mix in the refrigerator for 30 minutes so all the flavors soak in. 3. Cook veggie burger according to box instructions. 4. When it's almost done cooking, you'll want to melt some cheese. My secret for melting the cheese—pour a little bit of water into the skillet (maybe 2 or 3 tablespoons) and place a lid on top of the skillet. This will create some steam and melt the cheese perfectly for you. 5. When the burger is all set, flop it onto some lettuce and tomato on the bread of your choice, and spread some of the guacamole on the top piece of the bread. 6. Dig in!
