Mexican Wedding Cake Cookies

Ingredients
  • 2/3 cup walnuts
  • 1 cup dairy-free margarine (at room temperature)
  • 1/2 cup powdered sugar
  • 1 tsp. vanilla extract
  • 2 cups flour
  • 1/4 tsp. salt
  • 1 cup powdered sugar (for topping)
Instructions
  1. Preheat your oven to 350 degrees.
  2. Chop up the walnuts and set aside.
  3. Mix the margarine and sugar together.
  4. Add in the vanilla extract, flour, and salt, and mix until everything is blended well. Stir in the walnuts and refrigerate for about an hour.
  5. When the hour's up, shape the dough into 1 inch balls and set on a baking sheet. Bake for about 12–15 minutes, or until the edges of the cookies start to brown.
  6. Remove from oven and let cool—then roll these babies in powdered sugar.
  7. Enjoy!
