- 1 cup vegan vanilla ice cream (try So Delicious!)
- 1/2 cup soymilk
- 1/4 tsp. peppermint extract
- dash of green food coloring (optional)
- First, scoop the cup of ice cream into a mixing bowl and leave on the counter for about five minutes.
- Next, add the soymilk and peppermint extract. You can mix everything in a blender if you want, but I prefer to grab a fork and stir everything really fast—hey, it does the trick, ya know?
- After everything is mixed well, add a few drops of green food coloring (a little goes a long way). Stir until the color is evenly distributed, pour into a glass, and you're done!
