Tempeh Veggie Pizza

  • 2 cups shredded nondairy cheese
  • 1 vegan pizza crust
  • 2 cups chopped broccoli florets, steamed
  • 2 cups chopped arugula
  • 1 1/2 cups cooked and cubed tempeh
  1.  Preheat the oven to 450°F.
  2. Sprinkle the nondairy cheese over the pizza crust. Spread the broccoli florets evenly over the top, followed by the arugula and cooked tempeh.
  3. Bake until the crust is crispy and golden and the cheese is melted, about 8 to 10 minutes.

We know what you're thinking ("WTF, broccoli on my pizza?"), but hear us out! While broccoli, tempeh, and arugula may not be the most common toppings in the pizza universe, once they're combined with nondairy cheesy goodness and a golden crust, you'll see what we're talkin' about—seriously!

Bonus: Each slice is totally packed with tons of protein, vitamin B12, calcium, iron, and fiber. Who says that pizza can't be healthy? ;)
