Tofu Egg-Salad Sandwich!

Ingredients
  • 1 block of extra-firm tofu, drained
  • 2 slices of bread, toasted
  • 1/2 cup vegan mayo
  • 1 1/2 Tbsp. Dijon mustard
  • 1/4 tsp. tumeric
  • 2 1/2 celery stalks, chopped
  • 1/4 cup relish
  • Salt and pepper, to taste
Instructions

• Drain the tofu by pouring all water out of the container. Place the block of tofu on paper towels, and cover the block with the paper towels as well. Press down for a few minutes, or place a heavy book on top of the block. Mash the tofu with a fork once it's drained.
• Combine all other ingredients with the tofu, excluding the bread.
• Spread the mixture onto your slices of bread, and enjoy!
