Vietnamese-Inspired Tofu Tacos

Ingredients
  • 1/2 lb. super-firm tofu, drained
  • 1 Tbsp. soy sauce or tamari
  • some of your favorite spices (optional)
  • 4 corn tortillas
  • 1 cup chopped romaine lettuce
  • 1/2 cup chopped green onions
  • 1/2 cup chopped fresh cilantro
  • 1/2 chopped fresh mint
  • 1/2 jalapeno, sliced
  • 1/2 cup grated carrots
  • some Sriracha
Instructions
  1. Cut the block of tofu once lengthwise and then into 8 slices and lay flat in a frying pan.
  2. Cover with the soy sauce or tamari and turn the heat to medium. Flip until brown on each side. Add any spices you really like (e.g., lemongrass, savory, etc.), but just the soy or tamari is fine, too.
  3. Lay the tortillas on a plate. Place two big slices of tofu in each tortilla.
  4. Top with the lettuce, green onions, cilantro, mint, and jalapeño (if you like things spicy!) and garnish with the grated carrot and sriracha.
  5. Wrap it up and eat!
