  • Only Vegetarian in the house, what to do?

    Hi everyone! Before you tell me i should convince my parents and older sister to go veg, please realize that they don’t listen! I’ve told them about all the horrible things done to animals and the health benefits of being vegetarian, but they just shut me out, so I officially give up…

    Moving on, since I’m the only vegetarian in the house, usually the only things to eat are meat and junk food. I know lots of people like me have problems of gaining weight when they stop eating meat, because they simply cut the meat out of their diet and keep everything else. I love mushrooms and tofu, but what other staples and meat replacements do you guys eat? I’m trying to avoid frozen/microwavable foods as much as possible because I really want to eat healthier.

    Smoothies are very healthy and delicious! I recommend the superfood smoothie book or looking up recipes online. Go to the recipes section on here too. Hummus is always good and easy.

    When I lived with my folks, I’d make huge batches of food on the weekends (Rice and beans mostly with lots of veggies) and freeze them into portions that I could reheat and eat whenever. Just be sure to ask your folks to buy more veggies. Veggies are good.

    Rice and beans! Add veggie stock, olives, potatoes, and if you want to add some flavor get some Sofrito, but not the Goya brand because that has ham flavoring. It’s filling, tasty, and easy.

    You can get beans, quinoa, couscous, ect at the store and they aren’t very processed. You can pair them with a bag of steamed veggies (my favorite is long cut green beans) and a baked potato (I <3 poatoes).
