This pita was my absolute FAVE lunch to pack in college. It’s super easy to make, healthy (?important), and delicious—like all Middle Eastern food! It’s also cheap, so it’s a great lunch for those of you who pay for your own food, or those of you who are careful with your parents’ money.
Cucumber Hummus Pita
2-3 tablespoons hummus
1/2 of a medium-sized cucumber
- Chop up the cucumber (You can peel it if you want to—but if you don’t, be sure to scrub it under water so that it doesn’t feel waxy.)
- Cut the pita in half, so that you have a half-moon shaped pocket
- Spoon the hummus into the pita
- Add cucumbers
Makes 1 serving
If you’re taking this tasty lil’ momma to school, be sure to keep the pita separate from the cucumbers and hummus until you’re ready to eat. Nobody likes a soggy pita.
