I don’t know about you, but I’ve never really been a morning person. I’m the kind of gal who likes to hit the snooze button as many times as I can get away with before jumping out of bed and getting my day started, so I don’t really leave myself a ton of extra time to fix a gourmet meal for myself each morning. That’s why breakfast parfaits have always been my go-to for a quick, easy, and tasty breakfast!
Fruit, vegan yogurt, and granola parfaits are a great way to get your day started because you’re filling up your tank with lots of protein, whole grains, fiber, vitamin C, potassium … need I say more? If you’re looking for some serious brain food first thing in the morning, I’ve got you covered this week with my world-renowned (I can dream, can’t I?) fruit, vegan yogurt, and granola parfait!
Fruit, Vegan Yogurt, and Granola Parfait
2–3 strawberries, chopped
10 grapes, halved
1/4 banana, sliced
1/2 cup granola
6 oz. vegan yogurt
- Alternate layers of all the ingredients and enjoy!
How easy was that? The best part about breakfast parfaits is that you can change them up each morning with different fruits, depending on what’s in season. If you find yourself with extra time in the mornings over summer break, try topping yours with vegan whipped cream and almond slices, too. You won’t regret it!
