Our Recipe of the Week theme this month is fruit—orange you glad?!

I decided to spice it up this week with refried beans and jalapeno mango salsa—super easy! Mango goes really well with salty foods, so if you’re looking for a fruit that can really hang with all crowds, mango is your guy.

Did I mention that this recipe tastes so good that your friends will go bananas for it? You do have a ‘pear’ of friends, don’t you? Okay, okay, enough puns for one blog—on to the recipe!

  • 2 medium sized tomatoes
  • 2 jalapeno peppers
  • 1 mango
  • 1 small red onion
  • 1/2 of one lime
  • 1/2 can of refried beans
  • Salt to taste

First, peel the mango. Next, you’ll want to chop the tomatoes, mango, and onion and set aside in a medium-sized bowl. Then, slice the jalapeno peppers in half and get rid of those seeds inside (be sure to wash your hands after touching the jalapeno seeds). Dice up the jalapenos, and add them to the bowl with the tomato, mango, and onion. Chop your lime in half and squeeze it in the bowl, then add salt to taste.

Warm up the refried beans in a separate bowl, and then pour your salsa on top. How about a round of ‘apple’ause?! 😀
