Veggie and Barley Soup

Ingredients
- 1 qt. vegetable broth
- 2 Tbsp. miso paste
- 1/2 cup dry barley, rinsed
- 1/2 cup sliced carrots
- 1/4 cup pearl onions
- 1/2 cup chopped celery
- Salt and pepper, to taste
- Sprouts, to garnish
Instructions
• Put the broth in a pot over medium heat, add the miso paste, and stir.
• Stir in the barley and the vegetables. Bring to a boil.
• Turn the heat to low and cover. Let simmer for an hour.
• Season with the salt and pepper.
• Garnish with the sprouts.
• Enjoy!
