‘Catfish’ Po’ Boy
- 2 tsp. Cajun seasoning
- 4 Gardein Fishless Filets
- 2 sandwich rolls
- 2 Tbsp. vegan mayo
- 1/2 cup shredded cabbage
- 4 slices tomato
- Rub ½ teaspoonful of the Cajun seasoning onto each Gardein Fishless Filet and cook according to package directions.
- Toast the sandwich rolls and spread them each with 1 tablespoonful of the vegan mayo.
- Add 2 Gardein Fishless Filets to each roll. Top each with ¼ cup of the cabbage and 2 tomato slices (and any other desired toppings) and enjoy!
Tip: Mix Cajun seasoning into your vegan mayo for an added kick!
