‘Don’t be a Chump’ Chickpea Sandwich
- 1/2 can chickpeas
- 2 slices bread, toasted
- 2 slices tomato
- 1/4 cup shredded carrots
- some Italian dressing, to taste
- Drain the chickpeas, and mash them with some Italian dressing. Spread the mixture on one slice of bread.
- Top with shredded carrots, tomatoes, and add the other slice of bread.
