‘Drink Your Greens’ Smoothie
- 1/4 cup mixed berries
- 1/2 cup mixed spring greens
- 1 Tbsp. peanut butter
- 1/2 banana
- 1 cup water
- 1 basil or mint leaf, for garnish (optional)
1. Combine all ingredients except the basil or mint leaf in a blender. Add more water, if necessary, until the desired consistency is reached.
2. Pour in a glass, then garnish with a basil or mint leaf, if desired.
Sometimes salads can be boring—or maybe you want to start your morning right, and the idea of eating a plate of food just doesn’t sound that appealing (for those of us who aren’t morning people). Instead, trying blending some of your favorite leafy greens with berries, half a banana, and a spoonful of peanut butter (for a little kick of protein!) to take with you wherever it is you’re off to. 🙂
