Easy Mac & ‘Cheese’

Ingredients
- 2 Yukon Gold potatos, sliced
- 1 carrot, sliced
- 2 cloves garlic or 1/4 onion
- Water for boiling
- 1/2 cup unsweetened nondairy milk
- 1/4 cup nutritional yeast
- 2 tsp. lemon juice
- Salt, to taste
- Pepper, to taste
- 4 cups cooked elbow macaroni
Instructions
• Add the potato, carrot, and garlic or onion to a pot and cover with water. Bring to a boil and cook until soft and able to be pierced easily with a fork.
• Strain and combine with the remaining ingredients (except the macaroni) in a blender. Blend until smooth.
• Pour over the macaroni and stir well. Enjoy!
