Easy Vegan Caesar Salad With ‘Bacon’

Ingredients
- 2-3 strips tempeh bacon, crumbled or cut into pieces
- 1/2 head romaine lettuce, chopped
- 1/3 cup capers
- 1 small tomato, chopped
- 1/2 cucumber, chopped
- 1/2 avocado, sliced
- 1/2 cup vegan croutons
- Vegan Caesar dressing (try Follow Your Heart brand), to taste
- Cracked pepper, to taste
Instructions
- Cook the tempeh bacon according to the package directions. (I like to bake it or fry it lightly.) Let cool for 10 to 20 minutes.
- Put the lettuce in a large bowl and add the capers, tomato, cucumber, croutons, and avocado.
- Top with vegan Caesar dressing and cracked pepper.
- Toss and enjoy!
