Grilled Tofu Po’ (Bad) Boys

Ingredients
- 1/2 cup vegetable broth
- 1/4 cup buffalo hot sauce, plus more for garnish
- 1 Tbsp. vegan butter
- 1 14-oz. pkg. tofu, pressed
- 4 cups shredded cabbage
- 2 medium apples, grated
- 1 medium shallot, chopped
- 1 Tbsp. apple cider vinegar
- 6 Tbsp. vegan mayonnaise, plus more for spreading on the rolls
- Salt and pepper, to taste
- 4 hoagie rolls
- 2 tomatoes, sliced
Instructions
• Bring the broth, hot sauce, and butter to a boil in a large pan. Add the tofu, reduce the heat to a simmer, and cook for 10 minutes. Remove from the heat and allow to marinate for 10 minutes.
• Combine the cabbage, apples, shallot, vinegar, and 6 tablespoonfuls of the vegan mayonnaise in a large bowl and mix well. Season with salt and pepper.
• Toast the hoagie rolls and spread some vegan mayonnaise on each. Top with the tofu, sliced tomatoes, cabbage mixture, and more hot sauce, if desired.
