Kale, Apple, and Roasted Pecan Salad

  • 1/3 cup extra-virgin olive oil
  • 1/4 cup champagne vinegar or vinegar of your choice
  • 1/4 cup pure maple syrup
  • 1 1/2 tsp. lemon juice
  • 1/4 tsp. salt, plus more for seasoning
  • 1/4 tsp. pepper, plus more for seasoning
  • 1 8-oz. bunch kale, stems discarded and leaves shredded
  • 2 tart yet sweet apples, sliced into thin slices
  • 3/4 cup roasted pecans (glazed with brown sugar, if desired!)
  1. Whisk the champagne vinegar, olive oil, maple syrup, lemon juice, salt, and pepper together in a small bowl.
  2. Combine the kale, apples, and pecans in a large bowl. Add the vinegar mixture, little by little, tossing well.
  3. Season with salt and pepper
