Lemon-Quinoa Salad

Ingredients
- 1/2 cup dry quinoa
- 2 cups vegetable broth
- Juice of 2 lemons
- 2 tsp. Dijon mustard
- 2 tsp. olive oil
- 1 tsp. agave nectar
- Salt and pepper, to taste
- 1 15-oz. can garbanzo beans, drained and rinsed
- 1 cup cherry tomatoes, cut in half
- 2 avocados, diced
- 2 cups chopped spinach
- 1 bunch cilantro, chopped
- 1/4 cup chopped onions
- 2 cloves garlic, chopped
Instructions
• Pour the quinoa into a medium-size saucepan and add the vegetable broth. Bring to a boil, then reduce the heat to low and cover. Simmer until the quinoa is fluffy, about 10 to 15 minutes. Set aside.
• Mix the lemon juice, mustard, olive oil, and agave nectar together in a small bowl and season with salt and pepper.
• Combine the quinoa, garbanzo beans, cherry tomatoes, avocado, spinach, cilantro, onion, and garlic in a large bowl. Add the dressing and mix until well combined. Enjoy!
