Microwavable Quinoa Bowl
- 1/2 cup quinoa
- 1 cup water
- 1 vegan sausage (we <3 Tofurky)
- 1/4 cup baby spinach
- Vegan cheese, optional
- Salt, to taste
- Pepper, to taste
- Combine the quinoa and water in a microwavable bowl and cover loosely. Microwave on “high” for 8 minutes, stir, and let stand for 10 minutes.
- Chop the vegan sausage into small pieces and microwave for 30 seconds.
- Microwave the quinoa for 2 more minutes and let stand for 1 minute. Add the baby spinach and stir.
- Add the sausage and top with vegan cheese, if desired. Season with salt and pepper.
Tip: Too dry for your taste? Drizzle with vegan dressing or add a dollop of hummus.
