Pumpkin-Chocolate Chip Pancakes
- 1 1/2 cups Bisquick
- 1 egg replacer
- 1/2 cup almond or soy milk
- 1/2 cup canned pumpkin
- 1/4 tsp. cinammon
- some chocolate chips, to taste
- Mix everything together and spray a frying pan or griddle with cooking spray.
- Pour 1/4 cup of batter into pan and cook until browned on the bottom.
- Flip and cook until browned.
- Repeat until batter is gone.
- Serve with warmed maple syrup.
