Sweet Potato Tacos

Ingredients
- 1 sweet potato, chopped
- 1 Tbsp. oil
- Salt and pepper, to taste
- Paprika to taste, optional
- Cumin, to taste, optional
- 2 Tbsp. chopped onion
- 1 cup chopped spinach
- 2 tortillas
- Vegan cheese, optional
- Hot sauce, optional
Instructions
- Preheat the oven to 425°F.
- Place the chopped sweet potatoes on a baking sheet, drizzle with half a tablespoonful of oil, and sprinkle with salt, pepper, paprika, and cumin. Bake for 20 to 25 minutes, or until tender.
- In a separate pan, sauté the onion and spinach in the remaining oil for about 5 minutes. Season as desired.
- Combine with the cooked sweet potatoes, scoop onto the tortillas, and garnish with vegan cheese and/or hot sauce, if desired.
