Tempeh Avocado Wrap with Ranch

Ingredients
  • 2 flour tortillas
  • 1 pkg. tempeh
  • 1 cup bread crumbs (double-check the ingredients on these!)
  • 2 cups vegetable oil (canola, peanut, whichever—as long as it's not olive oil)
  • 1 avocado
  • 3 or 4 leaves of lettuce
  • 1 medium-sized tomato
  • 1/2 cup Vegenaise
  • 1 Tbsp. rice milk
  • 1 tsp. dill
  • 1 tsp. onion powder
  • 1 tsp. garlic powder
  • 1/2 tsp. salt
Instructions
  1. Cut the tempeh in ½ inch strips.
  2. Make the "eggs" in a bowl and set aside, then pour the bread crumbs onto a plate.
  3. Heat up the vegetable oil in a pan on the stove for a few minutes so it gets nice and warm.
  4. Roll the tempeh strips in egg replacer, then in the bread crumbs. Fry the strips in vegetable oil until they're golden brown.
  5. To make the ranch dressing, combine the Vegenaise, rice milk, dill, onion powder, garlic powder, and salt in a bowl.
  6. Slice up the tomato, lettuce, and avocado. Add everything in the tortilla, and voila—you're ready to eat!
