Creamy Tomato Barley Risotto

Ingredients

  • 1 cup barley, rinsed
  • 1 Tbsp. olive oil
  • 1/2 tsp. dried basil
  • 1/2 tsp. dried oregano
  • 1 clove garlic, minced
  • 1 1/2 cups canned, drained, diced fire-roasted tomatoes (regular canned tomatoes work, too)
  • 1 cup almond milk
  • 1/4 cup nutritional yeast
  • 1/2 Tbsp. miso + 1/2 Tbsp. water
  • 1/4–1/2  tsp. salt, to taste

Instructions

• Place the barley, olive oil, basil, and oregano in a medium-sized pot and stir until the barley is coated with oil. Cook over medium heat until the barley begins to sizzle.
• Add the garlic and reduce the heat to medium-low. Cook for 1 minute, then add the tomatoes, almond milk, nutritional yeast, miso-water mixture, and salt. Stir well and bring to a gentle boil, then cover and reduce the heat to low. Cook covered but with the lid slightly ajar for 30 to 35 minutes, being sure to stir the mixture about every 5 minutes. (Note: It should be creamy, not soupy.)
• Serve with a side of veggies and some bread. : )
