Ingredients

  • 1 bag Gardein Beefless Tips
  • 1 Tbsp. paprika powder
  • 1/2 tsp.  ground cumin
  • 1/4 tsp. chili powder, garlic powder, onion powdder, and black pepper
  • 1/2 tsp.  dried oregano
  • 1/2 tsp. dried thyme
  • 1/2 tsp. dried rosemary
  • 1 cup lemon juice
  • Cooking spray
  • 3-4 pieces flatbread or pita bread
  • 2 tomatoes, sliced
  • 1 small red onion, sliced
  • Vegan tzatziki to taste (try the recipe here: http://minimaleats.com/vegan-tzatziki/)

Instructions

1. Defrost the beefless tips in a large bowl or container for about 30 minutes.
2. Combine all the spices in a separate bowl. (I know this might seem like a lot of spices, but your parents probably have all these essentials in your cupboards. If you don’t have ’em, you need to get ’em! Dollar stores usually sell these, so stock up!)
3. Combine the beefless tips, spices, and 1/2 cup of the lemon juice and mix until all the tips are well coated. Add the remaining lemon juice and let marinate for 30 to 60 minutes. Season with salt and pepper.
4. Spray a pan with cooking spray and cook the beefless tips over medium heat, flipping every 2 minutes, until browned. (You might want to taste the tips while cooking and adjust the amount of spices or lemon juice, as needed.)
5. Top each piece of flatbread with some of the seasoned beefless tips, some sliced tomatoes, and some onions, then drizzle with the tzatziki. (Pro tip: Warm the flatbread over an open flame, such as on your stovetop burner, or in the microwave before using.)
