Vegan 'Meat' Taquitos

Ingredients
  • 2 large potatoes
  • 1 package vegan meat
  • 1 package taco seasoning
  • 12 corn tortillas
Instructions
  1. Grab a large pot and get some water boiling and warm up the oven to 400 degrees. Wash, skin, and cut up the potatoes and place them in the boiling water. Let those boil until they're soft, which will take about 10 or 15 minutes.
  2. Prepare the vegan meat by following the directions on the package and adding in the taco seasoning.
  3. Next you want to warm up the corn tortillas by warming them up in pan on medium-high heat for about 45 seconds on each side.
  4. Let the tortilla cool down for a minute, place about two small spoonfuls of mashed potato near the center and a little bit of the faux meat on top.
  5. Roll them up like a tight enchilada, and place it on a baking sheet. Once you roll all of your taquitos, bake for 15 minutes, and then you're all set!
