Free Stuff Friday: 'Tofu Never Screams' Tee!

Posted November 6, 2009 by Rachelle Owen

Who doesn’t love tofu? You can eat it so many different ways—baked, stir fried, grilled, broiled, steamed, sautèed, or deep fried (my fave). You can even use tofu to make a vegan cheesecake! Plus, tofu’s low in calories, high in protein, and contains no cholesterol. Want to know the best part about tofu though? No animals have to suffer to make it! If you didn’t already know, tofu’s made from soy beans.

To show how much we heart tofu, everyone in the office is sporting our new ‘Tofu Never Screams’ t-shirts.

The shirt’s so popular that even our favorite four-legged pal, Zoe wanted one of her own!

I know you want one too … and you’re in luck! This week, you can enter to win the ‘Tofu Never Screams’ t-shirt of your choice.

For your chance to win, just comment below with your favorite tofu dish. Entries must be received by November 13. The three people with the most delicious sounding dishes will be chosen as our winners and notified on November 16. Each winner will win their choice of our ‘Tofu Never Screams’ t-shirts.

Just so you know … by commenting here, you’re acknowledging that you’ve read and agreed to our privacy policy.

Also by commenting, you are agreeing to the following terms and conditions.

GOOD LUCK!

    Criminally Lazy Tofu Bake –
    I block firm Tofu
    2 chopped hot chilis Or 1 Dorset Naga chili
    4 tablespoons Soy Sauce
    2 cloves garlic
    2 thimbnails ginger root
    Bag Kale/Spinach
    1. Mix chilis, ginger, soy, garlic in a blender.
    2. Dump in a luchbox and leave in the fridge for 2/3 hours. You go do something fun.
    3. Drain excess marinade into a container and bake tofu block in oven at Gas Mark 6 for 25mins.
    4. Heat spinach with remaining marinade.
    5. Slice tofu over spinach – have lots of iced green tea to hand, particularly if you’ve managed to get some Dorset Naga in there.

    Mixed Veggie & Spicy Deep Fried Tofu Curry Udon
    SOOO DELICIOUS.
    A nice Malaysian yellow curry with colorful vegetables like red bell peppers, tender carrots, cauliflower, and snow peas (sometimes even broccoli because it’s my favorite vegetable, and it absorbs so much flavor!!), and then the best part: cubed spicy deep fried tofu. It’s REALLY spicy, but when you mix it with the curry, the spiciness blends into the curry and becomes a lot more subtle. Also, the red oils it has makes the yellow curry even brighter! The best part is getting a bite with a cube of the tofu because it’s so ridiculously flavorful; spicy, salty,deep-fried-y, curry-y.
    Try it at home!! 😀

    i am currently a vegatarian, working on becomeing a vegan. i plan on going vegan november 1st as it is national vegan day.i never really ate meat products when i was growing up i would have the ocasional hotdog or chicken fingers but thats about it. but 3 years ago i mad the choice to become a vegatartian bc animals have beating heart and feelings and can experience pain like us human beings do, the only difference is that unlike animals we can express our feelings and pain. and i feel much better knowning that when i eat something i know that it was not killed,toutured, or had a face before.

    Out of all the tofu dishes I’ve had, Ma Po Tofu would have to be my favorite.
    It’s a dish that consists of small cubes of silken tofu coated in a rich, chili and bean-based sauce with spicy Sichuan chili peppers and Sichuan peppercorns. With every bite, not only will your mouth be filled with the rich, fragrant aromas of the peppers, but you will also experience an overwhelming tingly sensation from the spicyness, soothed by the soft, silky texture of the tofu that follows it. Such flavors create such a balance that is guaranteed to excite the pallete. This dish definitely stimulates your 5th taste of savory, a truly umami(delicious) dish.

    Vegan Deep fried General Tso tofu. <3
    It’s cripsy and delicious, with a sweet flavoring. And when you bite into it, you get the perfect crunch, and then that rich tofu in the middle. :)
    Serve it on top of steaming white rice, poor some extra sauce on it, brocolli, peppers…
    And eat it with chopsticks. You can’t eat that kind of food without chopsticks! 😀

    Hot Tofu soup, with mushrooms, celery sticks, and a little tababsco sauce. Along with a handful of ceasar croutons. And just in case the tabasco is really spicy and overpowers the taste of the tofu and celery, a glass of orange juice full of vitamin c pulp.

    My favorite way to fix tofu: Slice extra firm tofu into 1/4″ rectangles. Dip in egg replacer (or vegan mayo). Roll in a mixture of Italian Bread Crumbs mixed with Dried Parmesan Cheese (omit the cheese if you’re vegan). Bake in a 400 degree oven for 20 minutes. Serve with a side of pasta and marinara.

    My favorite way to fix tofu is when I make veggie “meatballs” with it. I take a package of tofu, mix it with 1/2 package of TVP, some soy sauce, and garlic pepper salt. Then I form it into balls and bake at 375 degrees until browned. I use it for “meatballs”, or for taco, burritos, or in chili. I can also make a veggie “meatloaf” instead by adding tomato sauce, onions, peppers, and black olives.

    I like Bulgur, Lentil & Tofu Casserole recipe that I’ve found was delicious.
    In a large pot, cook the lentils in the stock along with the spices for about 25 minutes. Remove the bay leaf.
    While the lentils are cooking, heat the oil in a skillet. Add the carrot, garlic, onion & tofu. Saute for 5 minutes. Add the corn & bulgur. Stir to mix well. Remove from the heat & add the lentils & cooking liquid. Pour into a greased casserole. Bake qt 350F for 20 minutes.

    Tofu fried up (fried how ever you like). Chopped tomatos (all yellow, all red, or a mix or both but mix of both looks nicest) lightly salted, add a tiny bit of soy sauce (for slight color), mix it in with the tofu and stir it really well so the tomato likes kinda like a sauce but a little chunky. Eat with some rice and voila! Delicous 😀

    general tso’s tofu!!
    The best thing i have ever had, i got the idea from a 60 yera old man who had been a vegan forever he is my hero.
    It’s simply fried tofu in a skillet with a little olive oil, seasoned as desired.
    Top it off with some general tso’s sauce(found at a local grocery store)
    and served with whole grain rice and your favorite cooked vegetables.
    I prefer a spinach, mushroom combination with a few kinds of mushrooms.
    thanks for all the other ideas too. I will have too try them.

    Tofu Kale Soup with Kashi® Nugget Dumplings
    Soup
    1 tablespoon extra virgin olive oil
    1/2 cup minced organic onion
    1 clove minced organic garlic
    1 tablespoon minced fresh ginger
    1 diced organic carrot
    5 cups chopped organic kale
    5 cups organic vegetable broth
    8 ounces firm organic tofu, diced into small ¼-inch pieces
    2 tablespoons naturally brewed, low sodium soy sauce
    1/4 teaspoon kosher salt
    1/4 teaspoon black pepper
    Dumplings
    1 cup Kashi® 7 Whole Grain Nuggets cereal
    1/2 cup whole wheat pastry flour
    1/2 cup whole wheat flour
    2 tablespoons cold organic butter
    3-4 tablespoons ice cold water
    Directions
    In a stockpot over medium high heat, add olive oil, onion, garlic, ginger and carrot. Stir and cook for about 1 minute, sprinkling with salt and pepper. Add kale, broth, tofu and soy sauce. Bring to a simmer and cook 35 minutes until kale is tender.
    Use a blender or food processor to reduce Kashi® 7 Whole Grain Nuggets to a coarse powder; pour into a medium mixing bowl.
    In mixing bowl, add both flours; cut in cold butter. Add water, 1 tablespoon at a time, stirring until dough forms. Spread dough on floured work surface and kneed for a few seconds. Wrap in plastic and place in refrigerator to chill for 10 minutes. When cool, remove dough from plastic wrap and roll out until dough is 1/4-inch thick. Cut into strips about 1 inch wide.
    Drop dough strips into soup and simmer for an additional 25 minutes, until dumplings are firm. Adjust seasoning with salt and pepper, if needed.

    To make this vegan chocolate cake using carob instead of chocolate simply substitute carob chips and carob powder for the chocolate.
    Cake Ingredients:
    1 c. all purpose flour
    1 1/2 tsp. baking soda
    1 1/2 tsp. baking powder
    1 tsp salt
    1 1/4 c. grain sweetened chocolate chips, melted
    12 oz. firm silken tofu, cut in large chunks
    1 c. cocoa powder
    3/4 c. agave nectar
    1 T vanilla
    Variation: substitute carob chips and carob powder for the chocolate
    Chocolate Frosting Ingredients:
    3/4 c.melted grain sweetened chocolate chips, melted
    1/4 c. agave nectar
    1 T vegan margarine
    1 T coconut oil
    6 oz. firm silken tofu
    1/2 c. cocoa powder
    1/3 cup unsweetened coconut flakes
    chocolate or vanilla almond milk(optional)
    Frosting Directions:
    Melt chocolate chips
    Place chocolate, agave nectar, margarine, coconut oil, and tofu
    With mixer on high, beat until smooth and creamy
    Beat in cocoa powder gradually until you reach desired stiffness (a layer cake requires a stiff icing that won’t run down the sides of the cake)
    With a mixing spoon stir in coconut flakes
    If icing is too stiff stir in almond milk one T at a time until you reach desired stiffness
    Chill frosting in the fridge while you prepare cake
    Use to ice completely cooled cake
    Enjoy!
    Cake Directions:
    Prepare frosting and chill in fridge until cake is baked and cooled
    Preheat the oven to 350 degrees & oil cake pans
    Melt chocolate chips according to package instructions and set aside
    Combine flour, baking soda, baking powder, and salt in a large bowl and set aside
    Place melted chocolate, tofu, cocoa powder, agave nectar and vanilla in a food processor and process until smooth
    Pour chocolate mixture into flour and mix into a stiff batter
    Spread evenly in pans (an oiled spatula can help in this endeavor)
    8″ rounds bake for 20-25 minutes, 9″x12″ sheet cake bake for 35 minutes, or until a toothpick inserted into center comes out clean
    Remove from pans and cool on racks
    When cakes are completely cooled, frost and enjoy!

    Tofu Veggie Stir Fry
    INGREDIENTS:
    1/2 lb extra firm tofu
    1/4 cup cashew pieces
    2 tablespoon virgin olive oil
    1 tablespoon minced fresh ginger
    1-2 cloves garlic, minced
    1/2 jalapeno, seeded and minced
    1 tsp brown mustard seeds
    1 lg carrot, peeled and thinly sliced
    2 small zucchinis (no more than 6 inches long)
    1 bunch baby bok choy (stalks and leaves), rinsed and sliced crosswise
    1/2 cup chopped parsley or cilantro
    1 Tblsp curry powder or to taste
    1 Tblsp soy sauce or to taste
    1/2 cup coconut milk, light or regular
    1/2 cup water or stock
    DIRECTIONS:
    1. Cut the tofu into slices about 1 x 2 inches. Place in a bowl, stir in soy sauce, and set aside.
    2. Heat oil on low in a stir-fry pan, sauté pan, or deep skillet.
    3. If you want fried tofu, start it now on medium heat in a separate skillet, and set aside when golden brown on both sides
    4. If you’re serving the stir fry with a grain or noodles, start cooking now so it’ll be done when you the stir fry is finished
    5. Mince the garlic, ginger and jalapeno. Skip this step if you’re using dried ginger, garlic and chili powder
    6. Peel and slice the carrot thinly
    7. Half the zucchini lengthwise, slice thinly on the diagonal, and set aside
    8. Wash, shake dry and slice the bok choy thinly crosswise – stems and leaves
    9. Add the ginger, garlic, jalapeno, carrot, cashews and mustard seeds to the pan, turn up the heat a bit, and stir fry until the carrots are slightly cooked and the cashews a little brown.
    10. Add the zucchini and stir fry until it starts to get limp.
    11. Add the bok choy and stir fry until it wilts
    12. Add the curry powder, and other dry spices if using, and stir fry briefly
    13. Stir in tofu, water and coconut milk, salt and pepper to taste.
    14. Add the parsley, cover and cook on low for five minutes to blend the flavors
    15. Adjust seasonings to taste, and serve with your choice of grains, noodles or flatbread.
    ~~~~~
    It’s not my own recipe, but I think it’s delicious, nonetheless.
    I don’t exactly what to name it, but it’s tofu stir fried with mushrooms (or anything else of your choosing) then add it to a bowl of pasta. cover it with a pasta sauce (my favorite is “Classico” sun-dried tomato Alfredo). Then top with Parmesan cheese, mix, and enjoy.
    Hope you like it. :)
    Freeze tofu overnight, then thaw on counter the next day. That evening, squeeze out all the extra water, cube tofu into half inch cubes. Saute 1 bunch cleaned kale and 1 sliced onion until onion’s translucent. Add one minced clove garlic and teaspoon of red pepper flakes. Add 1.5 cups veggie broth, cubed tofu, sliced mushrooms (handful), and cooked vegan “egg noodles”. Let all the flavors mix, mingle, and make love. Serve! I loved this dish!
    this is my favorite…
    (: its called tofu patties.
    theyre delicious.
    (:
    1 lb extra firm tofu or pressed firm tofu
    1 cup fresh or frozen corn
    1/2 cup finely chopped celery
    1 – 2 garlic cloves, minced (note: remove the skins and inner stems first)
    1/2 cup finely chopped parsley or basil leaves
    1 cup cooked brown rice
    1/3 cup flour
    1 Tblsp minced jalapeno pepper or a pinch of cayenne
    1 Tblsp minced fresh ginger or 1/2 tsp dried
    1/2 tsp turmeric
    1 tsp paprika
    1 tsp gr coriander
    1/2 tsp gr cumin
    2 Tblsp olive oil
    1/2 tsp dried thyme leaves
    fresh gr black pepper to taste
    1/2 tsp salt and/or 1 Tbsp liquid aminos or soy sauce
    Reserve: 1 cup fine bread crumbs (whiz a couple of whole wheat bread crusts in the blender or food processor, or crumble and rub by hand)
    If you can only get firm tofu, press out the excess water: Cut tofu lengthwise in 4 – 6 slices. Place in a folded dishtowel, cover with a cutting board, weighted with something heavy. Leave for ten minutes. This method will make the tofu extra firm, so the mixture isn’t gooey
    Preheat the oven to 375 degrees
    Cut tofu into chunks, and whiz in a food processor for about 30 seconds. If you don’t have one, mash with your hands or a potato masher
    sauté the veggies (include the fresh ginger, jalapeno & garlic if you’re using them) in the olive oil on medium high heat for 5 – 10 minutes. Add the corn and spices and sauté another minute or two
    Add the veggie spice mixture, rice and flour to the tofu, and mix well by hand, or on low in the food processor just until the mixture clumps up
    Form into a dozen balls, flatten to 3/4″ thickness, coat with bread crumbs and place on a baking sheet
    Bake for 25 minutes until the outside is crisp and browned
    Good served with spicy tomato or tahini sauce, salsa, or even ketchup in a pinch
    This is ultimately the best tofu ive ever had!
    The Best Marinated and Baked Tofu Recipe EVER!
    Ingredients (use vegan versions):
    1 package extra firm tofu
    1 cup mustard dressing
    1/4 cup tamari
    1 teaspoon hickory smoke flavoring
    1 clove garlic minced finely
    2 tablespoon extra virgin olive oil
    freshly ground pepper
    Directions:
    Preheat oven to 400 degrees. Slice tofu to your liking. Mix all ingredients well. Dip tofu into the marinade. You can let it marinate for a little while if you like but its not necessary. Lay the tofu slices on a sprayed cookie sheet and grind pepper over the top of them. Bake for about 20 minutes turning about halfway through and baste with excess marinade. Tofu will bubble and brown when it is finished. This tofu is great on sandwiches and has a very egg-like taste. Enjoy!
    Preparation time: 15 minutes
    My favorite is in a curry
    you can just buy a korma to mix in. My favorite is by VH it has a nice sweetness because it has a little coconut juice. In the curry you use an apple, onions, zucchini, and also spinach if you like. I like a firm organic tofu to go with it =) you want to cook the apple and zucchini long enough that they’re not super crunchy but add a nice texture to the mix. =) once you’ve cooked all your veggies and tofu add the korma sauce and mix it in. When it’s warm enough for you it’s nice on top of a plate of rice . super easy and delicious!!
    Enjoy =)
    4 carrots
    2 zucchinis
    4 green onions
    2 stalks celery
    1 cup of soy sauce
    2 tsp. arrowroot powder
    Safflower oil
    Garlic powder
    Ground ginger
    1 pkg. firm tofu (cut into 1/2″ cubes)
    2 c. cooked brown rice
    1 pkg. chow mein noodles
    Wash zucchini, celery and onions, then dry them thoroughly. Peel carrots and cut them into very thin strips (3 inch long x 1/8 inch). Cut celery 1/4 inch thick pieces. Cut zucchini into half lengthwise, then into 1/8 inch slices. Slice green onions 1/4 inch thick.
    In a large wok or skillet heat 2 teaspoons oil until very hot but not smoking. Add carrots and celery; stir fry with wooden spatulas for 3 minutes. Add zucchini and onions. Cover pan, lower heat to medium-high, cook 1 minute. Uncover, stir a little, cover and cook 1 1/2 minutes more. Remove from heat.
    In small saucepan pour in soy sauce. Sprinkle in arrowroot powder and about 1/8 teaspoon each garlic and ginger. With wire whisk, stir to dissolve. Thicken over medium heat. When slightly thick, add the cubed tofu. Stir gently to continue thickening and heating through the tofu. Combine with the vegetables. Serve over chow mein noodles and cooked brown rice.
    I got this recipe from cooks.com when I first became a vegetarian! I love it and so does my family and they’re not even vegetarian!
    2 (16 ounce) packages chicken-style seitan, cut horizontally into 1 inch thick strips
    1 cup garbanzo bean gravy
    1 (17.5 ounce) package frozen puff pastry, thawed
    Directions
    Tear bread into 1-inch cubes and place into a large bowl. Let bread dry in the bowl, uncovered, at least 8 hours.
    Melt margarine in a large skillet over medium-high heat. Stir in carrots, celery, and onion. Cook and stir until the onion has softened and turned golden brown, about 10 minutes. Scrape onion mixture into the bowl with the dried bread; season with parsley, sage, and pepper. Whisk egg replacer, water, and vegetable broth in a small bowl until smooth. Pour over bread cubes and gently fold until evenly mixed. Let stand 30 minutes to allow bread to absorb the liquid.
    Preheat an oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil and coat with nonstick cooking spray.
    Brush seitan with gravy on both sides; arrange overlapping slices on foil in a row, mounding in the center. Press stuffing mixture around seitan to cover. Wet hands lightly and press into a neat oval. Roll pastry sheets out to 1/16-inch thickness; arrange, overlapping slightly, to make a large rectangle. Seal edges with dabs of cold water. Drape pastry over mound; trim excess away from bottom. Use scraps to cut out decorative shapes (leaves, apples, etc). Attached with dabs of cold water.
    Bake until the pastry in deep golden brown, 1 to 1 1/4 hours. Cover the pastry with aluminum foil if it begins to brown too much.
    All you have to do is put vegetable broth, dry sherry, soy sauce, water chestnuts, snow peas, sliced mushrooms and tofu in a large pot and heat it up! but make sure you give ample amount of time for the tofu to soak up all of those delicious flavors, about 30 minutes should do!
    It’s one of my favorites, enjoy!
    i would say my favorite recipe would be
    vegan chocolate cake
    Cake Ingredients:
    •1 c. whole wheat pastry flour
    •1 1/2 tsp. baking soda
    •1 1/2 tsp. baking powder
    •1 tsp salt
    •1 1/4 c. grain sweetened chocolate chips, melted
    •12 oz. firm silken tofu, cut in large chunks
    •1 c. cocoa powder
    •3/4 c. agave nectar
    •1 T vanilla
    •Variation: substitute carob chips and carob powder for the chocolate
    Chocolate Frosting Ingredients:
    •3/4 c.melted grain sweetened chocolate chips, melted
    •1/4 c. agave nectar
    •1 T vegan margarine
    •1 T coconut oil
    •6 oz. firm silken tofu
    •1/2 c. cocoa powder
    •1/3 cup unsweetened coconut flakes
    •chocolate or vanilla almond milk(optional)
    Frosting Directions:
    1.Melt chocolate chips
    2.Place chocolate, agave nectar, margarine, coconut oil, and tofu
    3.With mixer on high, beat until smooth and creamy
    4.Beat in cocoa powder gradually until you reach desired stiffness (a layer cake requires a stiff icing that won’t run down the sides of the cake)
    5.With a mixing spoon stir in coconut flakes
    6.If icing is too stiff stir in almond milk one T at a time until you reach desired stiffness
    7.Chill frosting in the fridge while you prepare cake
    8.Use to ice completely cooled cake
    9.Enjoy!
    Cake Directions:
    1.Prepare frosting and chill in fridge until cake is baked and cooled
    2.Preheat the oven to 350 degrees & oil cake pans
    3.Melt chocolate chips according to package instructions and set aside
    4.Combine flour, baking soda, baking powder, and salt in a large bowl and set aside
    5.Place melted chocolate, tofu, cocoa powder, agave nectar and vanilla in a food processor and process until smooth
    6.Pour chocolate mixture into flour and mix into a stiff batter
    7.Spread evenly in pans (an oiled spatula can help in this endeavor)
    8.8″ rounds bake for 20-25 minutes, 9″x12″ sheet cake bake for 35 minutes, or until a toothpick inserted into center comes out clean
    9.Remove from pans and cool on racks
    10.When cakes are completely cooled, frost and enjoy!
    YUM!
    My favorite recipe with tofu if vegan eggnog!
    I make it every thanksgiving.
    It’s the best.
    Here’s a recipe.
    21 oz extra-firm silken tofu
    2 cups soymilk
    2/3 cup turbinado sugar, light brown sugar, or sucanat (or use 1/2 cup honey or 1 cup alternate liquid sweetener)
    1/4 teaspoon salt
    1 cup cold water
    1 cup rum or brandy (or use apple juice with rum or brandy flavoring to taste)
    4 1/2 teaspoon vanilla extract
    20 ice cubes
    Nutmeg
    Crumble the tofu and blend with soymilk, sugar and salt. Blend until smooth. Pour into mixing bowl, and whisk in water, rum and vanilla. Cover and refrigerate.
    Place the crumbled tofu and the soymilk in a blender with the sugar and salt. Blend until very smooth. Scrape this into a large bowl or pitcher, and whisk in the water, rum or brandy, and vanilla. Mix well, cover, and refrigerate until serving time.
    To serve, blend half of the mixture in the blender with 10 of the ice cubes until frothy. Repeat with the other half. Serve in glasses with nutmeg sprinkled on top.
    Serves 10
    I take a package of Firm tofu and grate it with a grater and then fry it with a packet of taco seasoning and have it in tacos. It is pretty much the same texture as beef,tastes even better then meat did as you don’t have all that fat ruining the taste and it’s animal friendly and healthier ! It’s also great to add onto a layer of taco chips, covered in black beans, mozzerella and/or cheddar cheese with chopped tomatoes and green onions. That’s great with sour cream and guacamole on the side for dipping :)
    1-2 bulbs of fresh lemongrass. When chopped should be about 3 tablespoons.
    1 light, crusty baguette
    1 cup shredded carrot
    1 cup shredded daikon radish
    Carrot/radish pickle marinade: 2 cups warm water,1/4 cup vinegar, 2 tablespoons sugar, 1
    tablespoons salt.
    Other Condiments: Sprinkle of soy sauce, veginaise, fresh cilantro sprigs, slices of: cucumber, jalapeno
    chili’s, red onion
    INSTRUCTIONS
    1. Drain Tofu and blot dry with paper towels to remove excess moisture. Slice into about 1/4 ” pieces. Assemble carrot/daikon pickle marinade and add shredded carrots and daikon to mixture. Let carrots & daikon soak for about 1 hour.
    2. Wash lemongrass and chop bulbs and remaining of stalk that is tender. Chop garlic together with
    lemongrass until very fine. (May use food processor!)
    3. In large plastic freezer bag, combine crushed lemongrass & garlic, vegetable oil, soy sauce,
    salt, pepper and sesame oil. Mix the marinade well, then add slices of tofu in bag. Lay tofu slices in gently on top of each other so that they don’t break. Make sure all marinate coats each slice of tofu.
    4. Let marinade for at least 1 hour or until all tofu slices soak up the marinade. Heat up frying pan. Do not add oil to the pan because the tofu is well oiled. Fry slices of tofu until both sides are golden brown with a nice firm crust. Let cool and assemble banh mi.
    5. Cut baguette into desired portions. If your baguette is too heavy and dense, you can scoop out some of the center. I butter and warm them in the oven. I add Veginaise, lettuce, onion, cucumber, the tofu, the pickled veggies and then some cilantro.
    ENJOY!
    She got tofu pieces and cut them in little, thin squares. then, she got this really good grain pasta that’s good for you. she cooked the tofu and boiled and did whatever to the pasta. then, she put spices and salt on it. it was really, really good. she had a salad with carrots and lettuce. it was really good. I would suggest trying it.
    Vegetarian Enchiladas!
    Use tofu that has been frozen, thawed, and crumbled! It’s very hearty(pun intended).
    Mix into an enchilada filling of shredded cheese (cheddar or a blend), cream cheese, satued bell peppers (yellow, orange, or red, not green), and salsa or salsa verde. I prefer salsa verde, it gives a much smoother mixture.
    Fill tortillas with 2 or so scoops of the mix, roll up, and put into a baking pan.
    Top with more salsa and cheese, bake until tortillas begin to brown on edges.
    This may sound disgusting at first, but it’s really not all that bad.
    I use that faux-egg mixture and add in some vegan cheese, onions, garlic, peppers, and then with it add in the tofu without initially frying it, so it melts only a bit before wrapping it in a tortilla almost like an omelette (though the dexterity is not the same), and then eating it. Great for on the go when wrapped in foil, or a nice sit-down knife-and-fork breakfast.
    Tofu is like a staple in my fridge, so it’s often included in whatever I cook 😀
    I often think of tofu when I have the time to cook a meal, and this is often what I make: stir fried rice and tofu (and veggies)~
    I cut howvever much tofu I want, usually about half a cube-shaped package, and cut into bite sized pieces. I cut up onions, carrots, and celery, then I sautee everything together with veggy oil. Next goes the soysauce, about 2 cloves of garlic that has been cut into really tiny pieces, and hot pepper paste. After that is simply however much rice I want and I stir cook until it’s done. Sesame seeds sprinkled on top is a nice addition. Even better is when you put sesame seed oil on top of it all.
    Tofu fried rice! I squeeze out the excess water in a package of firm tofu and cube it. After marinating it for 10 minutes in tamari sauce I saute it in a little olive oil so that it’s a little fried. Then I transfer the tofu to a bowl and in the same pan I saute ginger, garlic and scallions for a delicious asian flavor. I add in rice (I use the bagged frozed veggie fried rice from Trader Joes but any rice will do), add back in the tofu, add vegan beef strips, mushrooms and mix in a little chili oil. It’s soooo yummy! Sometimes I add in a little quinoa for more nutrition.
    We crumble up tofu and use it in place of ground beef. You pan fry it with tomato sauce, cumin, chili powder, cayenne pepper, raisins, black olives, and then you add cooked peas on top when it’s done. It sounds a little weird with the raisins and all….but it’s amazing! And such a neat way to recreate a Cuban dish but made vegan!! Yum Yum!!!
    vegan dark chocolate, finely choped, mixed with just enough hot watter to melt it
    (you can add sugar to taste if its to bitter-the taste can vary depending on the brands of tofu and chocolate)
    mix in food processor
    This makes chocolate mouse.
    You can add a packet of instont coffe to make it chocolate mocha flavored =)
    Thats petty bbasic, if you want to go a step farther, put it in a grahm craker pie crust, spread a layer of (non-dairy) whipped cream on top, then take some more of your vegan dark chocolate, and use a vegetable peeler to make chocolate “shavings” for extra flavor and a gorgeous presentation.
    Two dishes in one!
    I heart tofu! My favorite recipe is actually one that my mom used to always make (she wasn’t even a vegan…but a korean haha) so anyway..its korean tofu & vege stirfry. I still love to make this dish and have made it for a couple of friends who have never had tofu!
    cut one container of FIRM style sofu in cubes
    3 minced cloves of garlic
    Place in frying pan w/seasme oil (let tofu and garlic get a little brown/toasted)
    Then add:
    1 chopped green onion (scallion)
    1-2 tsp of seasme seeds
    2 cups sliced strips of yellow bell pepper/green & red
    Sprinkle of red crushed peppers
    1 small can of chopped water chestnuts
    Sprinkle rock salt & pepper
    Fry on medium to high heat until desired “crispness” or “softness” of veggies/tofu.
    Serve over rice (maybe even a side of kimchee!!!!)
    I like it as a berry treat!
    Blend together the fallowing to make filling:
    Cube silken tofu
    2-3 Tbs sugar
    2tsp lemon or lime juice
    1 1/2 tsp vanilla
    Next you make a crust:
    3/4 cup flour
    1/4 cup sugar
    3Tbs apple sauce
    add water to get it thin enough to form to sides of muffin tin walls…
    bake at 325 until thin crust is browned- let stand until cool.
    pour filling into crusts and cool in refrigerator.
    when ready to serve top with fresh or frozen berries… I like to mix blue berries, strawberries and black raspberries. add a little lemon zest for some tartness.
    Enjoy!
    Mango Ginger Tofu…
    it’s a recipe i took from « Vegan with a vengeance ».
    It’s yummy, tasty and full of color and flavor.
    You have to marinate over night in a marinade with mango, ginger, garlic and jalapenos and then put in the oven with some mango slices and red peppers.
    it makes a lot, so it’s perfect for any vegan potluck or just put the extra tofu the next day in a pita with crisp lettuce, fresh tomato and red onions…. miam
    Bonne appétit;)
    Easy Vegan Greek Tofu Salad
    1 lb firm tofu
    1/3 cup olive oil
    1/3 cup wine vinegar
    1 tablespoon basil
    1/2 tsp black pepper
    1 tsp oregano
    1 tsp salt
    2 small tomatoes
    1 cucumber
    1/4 red onion
    1 cup black olives
    Cut 1 block tofu into small chunks the size of dice. Press the chunks gently with towels or cloths to absorb any excess water. Steam raw tofu for 5 minutes to kill food pathogens if you’re not going to bake it
    Whisk remaining ingredients together in a bowl
    Pour this marinade over the tofu and let sit for at least an hour, or up to overnight
    Meanwhile, chop veggies, stir them into the tofu mixture and toss. Or bake the tofu as below
    SV Suggestion: Or fry the marinated tofu in a little oil), and slice into strips before adding to the salad
    Optional: For Greek Tofu Bake, cut the tofu into thin slabs instead of cubes. Prepare the marinade as directed above. Lay the slabs on a baking tray, cover with marinade, and bake at 350° for 25 minutes, flipping once. Cut into strips and serve over salad or in whole wheat tortillas
    Serve on top of a bed of fresh spinach leaves or other greens
    Kadie’s Famous Tofu Lettuce Wraps! (:
    Ingredients:
    * SERVES: 4 as an appetizer, 2 as the main course
    * 1 head fresh (and REALLY COLD) iceberg lettuce
    * 3 cloves garlic, minced
    * 1 red chilli, de-seeded and finely sliced
    * 2 shallots, sliced finely
    * 1/2 cup firm tofu, cut into “matchsticks”
    * 1 carrot, grated or cut into thin strips
    * 4-5 shiitake mushrooms, thinly sliced
    * 1/2 cup shredded cabbage (red is very good, but any type will work)
    * 3 spring onions, sliced lengthwise into matchstick-like pieces
    * approx. 2 cups bean sprouts
    * 2 Tbsp. lime juice
    * 2+1/2 Tbsp. regular soy sauce
    * 1 Tbsp. vegetarian oyster sauce
    Preparation:
    1. Drizzle 2 Tbsp. oil into a wok or large frying pan over medium-high heat. Add garlic, chili, and shallots. Stir-fry one minute, or until fragrant. Stir-frying tip: add a Tbsp. water whenever the wok/pan gets too dry instead of more oil.
    2. Add tofu, carrot, shiitake mushrooms, cabbage, and spring onions. As you stir-fry, add the lime juice, soy sauce, and vegetarian oyster sauce. Stir-fry about 1 minute.
    4. Add the bean sprouts and stir-fry briefly to mix. Remove from heat and do a taste test for salt, adding 1 Tbsp more soy sauce if not salty enough.
    5. Cut off the stem part of the iceburg lettuce so it’s easier to separate the leaves. Now place the lettuce, sir-fried filling, and the toppings on your table in separate bowls/plates, allowing family or guests to make their own wraps.
    6. To assemble, take a whole lettuce leaf and place 1-2 heaping tablespoons of filling in the center, then wrap up and eat! (For those who like it extra spicy, Thai chilli sauce can be added as another topping.) ENJOY!
    My favorite would have to be this THAI twist on a burrito:
    Organic brown rice, Steamed asian veggies* (like bok choy, carrots, snow peas, nappa cabbage, and broccoli), canned bamboo shoots, curry peanut sauce, and PAN FRIED TOFU… I like a little mango fruit salsa with it as well!
    Roll it all together in your favorite vegan tortilla and you can hit the road with some yummy Thai food. If you get too carried away with portions, save the stir fry and roll it up tomorrow :)
    *Asian veg mixes are often available prepackaged together with the frozen veggies at the grocery store.
    Best, easiest desert:
    I package silken tofu
    1/2 Cup vegan powdered sugar
    Mix in blender for 3 – 4 minutes.
    Spoon into custard/pudding dishes and refrigate
    Tastes great as is or do any of following variations:
    Mix in 1/2 Cup frozen fruit
    Swirl in vegan melted chocalate for marbled desert, or blend in chocalate for chocalate desert.
