Kick Back with a Butterybeer Tonight

I’ve been dreaming about butterybeer for years, and tonight seemed like the perfect night to share a celebratory butterybeer before hitting the movie theater for a super-special movie release.

Good thing PETA staffer Ashley whipped up a hot AND cold version of the infamous butterybeer, and sent her recipe over to peta2 to share with ya’ll. Looks amazing right?

Hot Vegan Butterybeer
6 oz. apple juice or cider
2 dashes cinnamon
1 dash nutmeg
1 pinch ginger
1 tsp. imitation butter
2 oz. nondairy milk or creamer
Additional cinnamon

  • Warm the apple juice or cider over medium heat for approximately 5 minutes, stirring constantly. Do not boil.
  • Add the cinnamon, nutmeg, ginger, and imitation butter.
  • Pour the nondairy milk or creamer into a mug, then add the heated cider mixture.
  • Sprinkle with the additional cinnamon and serve immediately.

Makes 1 serving

Cold Vegan Butterybeer
2 small scoops vegan vanilla ice cream
2 dashes cinnamon
1 dash nutmeg
1 pinch ginger
1 tsp. imitation butter
4 oz. cold apple juice or cider
Additional cinnamon

  • Place all the ingredients, except the apple juice or cider and additional cinnamon, in a glass.
  • Pour the apple juice or cider over the ice cream and spices.
  • Sprinkle with additional cinnamon and serve immediately.

    I went down to Universal Studios in Florida knowing their butter beers were not vegan and being very dissaointed. This recipe easily made my day, since now i can try one πŸ™‚

      Courtesy of Veganbaking.com I recommend making a super big batch because it is a little time consuming, and the ingrediets are a little bizarre. Good luck!

      Vegan Butter
      This is regular ‘ol vegan butter that’s designed to mimic your favorite commercial variant. Use it wherever you use butter or vegan butter.

      ΒΌ cup + 2 teaspoons soy milk
      1 teaspoon apple cider vinegar
      ΒΌ + 1/8 teaspoon salt

      Β½ cup + 2 Tablespoons + 1 teaspoon refined coconut oil, melted
      1 Tablespoon canola oil

      1 teaspoon liquid soy lecithin
      ΒΌ teaspoon xanthan gum

      1)
      Place the soy milk, apple cider vinegar and salt in a small cup and whisk together with a fork. Let it sit for about 10 minutes so the mixture curdles.

      2)
      Melt the coconut oil in a microwave so it’s barely melted and as close to room temperature as possible. Measure it and add it and the canola oil to a food processor. Making smooth vegan butter is dependent on the mixture solidifying as quickly as possible after it’s mixed. This is why it’s important to make sure your coconut oil is as close to room temperature as possible before you mix it with the rest of the ingredients.

      3)
      Add the soy milk mixture, soy lecithin and xanthan gum to the food processor. Process for 2 minutes, scraping down the sides halfway through the duration. Pour the mixture into a mold and place it in the freezer to solidify. An ice cube mold works well. The vegan butter should be ready to use in about an hour. Store it in an airtight container in the refrigerator for up to 3 months or wrapped in plastic wrap in the freezer for up to 1 year. Makes 1 cup or the equivalent of 2 sticks vegan butter.

    Besides the fact that it’s “Butterbeer” and not “Butterybeer” it still sounds awesome. I never even thought to find a vegan version of this. πŸ˜€ Thanks guys!
