Recipe of the Week: Green Tofu Enchiladas!

I don’t know about you, but my favorite thing about going back to school is all of the shopping. Seriously, who doesn’t love new clothes and school supplies? OK, OK, I’m no longer in school, but that doesn’t mean a girl can’t get her shopping on, right? ;-) Granted, my wallet isn’t too happy about it, but just because I’m counting my pennies doesn’t mean that my taste buds have to suffer—remember, veganism is cheap, people!

The thing I ♥ most about tofu is how freaking affordable it is! Oh, and did I mention that you can easily find it at your local grocery store? Yep, what’s not to love? :-)

Try these super-inexpensive but incredibly delicious tofu enchiladas!

Green Tofu Salsa Enchiladas

  • Prep time: 5 mins
  • Cook time: 10 mins
  • Servings: 3

Ingredients
  • 1 Tbsp. oil
  • 1/2 onion, thinly sliced
  • 1/2 block extra-firm tofu, drained and cut into strips
  • 1 tsp. minced garlic
  • 1 tsp. cumin
  • 1/2 tsp. salt
  • 1 tsp. chipotle adobo sauce (optional)
  • 6 yellow corn tortillas
  • 1/2 cup mild green salsa
  • 1 Tbsp. vegan sour cream (optional)
  • 1 Tbsp. vegan cheese (optional)
Instructions
  1. Heat the oil in a pan and add the sliced onions, tofu, garlic, cumin, and salt. If you’re using the chipotle adobo sauce, you want to add it now. Let it cook for 5 minutes, or until the tofu is slightly golden.
  2. Warm your tortillas on a separate pan or in the microwave—that way, they’re easier to work with. Place a tortilla on a plate and fill with 3 tablespoonfuls of the tofu mixture. Roll the tortilla with the filling and repeat with the remaining tortillas.
  3. Heat the green salsa and pour over the enchiladas. You can top these with vegan sour cream or vegan cheese! Enjoy!

Makes 6 tortillas

There you have it, another easy way to cook tofu (and stay on a budget!).
