Recipe of the Week: Cheesy Broccoli
Posted March 8, 2012 by Christina
Since vegetables are our theme this month for the “Recipe of the Week” blog series, I figured there was no better side dish to make than a vegan version of cheesy broccoli!
Cheese is traditionally made from cow’s milk and contains saturated fat, cholesterol, and pus. Yes, pus. The best thing about vegan cheese is that you can make a sauce with it, and it won’t be contaminated with all the junk that’s in dairy cheese. How awesome is that?
2 tsp. olive oil
1/3 bag frozen broccoli
1/4 cup nutritional yeast
3 Tbsp. soy milk
1/2 tsp. soy sauce
1/2 tsp. onion powder
1/2 tsp. garlic powder
Dash chili powder
- Put the olive oil and broccoli into a pan and cook over medium heat for 6 to 8 minutes, or until tender.
- Mix the remaining ingredients in a small bowl. Microwave for 30 seconds.
- Place the broccoli on a plate and drizzle the sauce over it.
Makes 2 small servings
Yum! What’s your fave vegetable?
