Recipe of the Week: Christmas Morning Chocolate Chip Pancakes!
Every family has holiday traditions. For my family, nothing complements a busy morning spent ripping open presents with reckless abandon quite like a heaping stack of warm and fluffy pancakes. Of course, pancakes can be sweetened with any number of added ingredients—strawberries, blueberries, but since this is chocolate month on the blog, we’ll be serving up our pancakes Wonka-style.
This recipe couldn’t be any easier to make, so no need to take precious time away from playing with (insert the name of the new gizmo you just got from Santa here).
Christmas Morning Chocolate Chip Pancakes
1 cup whole wheat pancake mix (several vegan brands exist, so check the labels)
3/4 cup soy milk
1 banana, as an egg replacer, mashed
Small handful of semi-sweet vegan chocolate chips
Real maple syrup
Cocoa powder, for garnish (optional)
- Warm a pan or griddle on the stove over low heat and add a touch of vegan margarine or vegetable oil to coat.
- In a large bowl, mix together the pancake mix, soy milk, and banana. Ladle out pancake-sized portions onto the pan or griddle.
- Add a few chocolate chips to each pancake and flip once the underside starts to brown. When both sides are sufficiently browned, remove the pancakes and start stackin’.
- Top with syrup and garnish with cocoa powder (if desired), make a loud “mmmm” sound, and offer a bite to your jealous sibling.
