Recipe of the Week: Classic Vegan Nachos!
There are a few things that we ALWAYS have on hand: black beans, tomatoes, and avocados… and since we’re often too lazy to conjure up a new recipe or spend an hour cooking, these three things happen to be essential for one of our favorite dishes…
Here’s what you’ll need:
- 1 bag of tortilla chips
- 1 avocado, sliced
- 1 can of black olives
- 1 large tomato, sliced into small cubes
- 1-2 stalks of green onion, sliced thin
- 1 can of black beans or refried beans
- 1 tube of Teese nacho cheese (you can also use Daiya!)
- 1 scoop of Tofutti Sour Supreme
- Half of 1 lime
All right so there are a ton of ways to make nachos but this is the most classic and not-so-healthy way to do it—so be warned. However, these nachos will fool even your most hardcore flesh-eating friend, so let’s get to it!
Heat up your refried beans or black beans in a pan or microwave until hot. While they’re warming, grab a bowl and pour your tortilla chips inside.
Cut about half of the Teese and put it into a microwave safe bowl—nuke it until melted (being sure to stir along the way). Scoop the beans onto your chips, pour the cheese over the beans, and top with all of the chopped veggies and black olives.
Take your lime and squeeze over the nachos, and then top with a dollop of Sour Supreme.
What are you waiting for!? Make these and let us know what you think!
