Recipe of the Week: Mashed Potato Patties
Let me set the scene for you: It’s the day after you’ve feasted on a huge batch of mashed potatoes and vegan turkey (Let’s be real—this doesn’t only happen at Thanksgiving!) and you know you’re gonna use the leftover faux turkey in a sandwich, but what the eff are you gonna do with those leftover tatters? I’ve got three words for you: mashed potato patties!
Here’s what you’ll need:
- Some leftover mashed potatoes (or whip up a new batch)
- Small Onion, chopped
- Olive Oil
- Salt and Pepper
- Bread Crumbs
Now this recipe is gonna require some judgment on your part, so bear with me. It’ll all depend on how much mashed potatoes you have. Grab a skillet, and sauté the onions in a bit of olive oil. Once they’re softened, mix them into the potatoes. Add some bread crumbs (this is where the judgment comes in, since the amount will depend on how much of the potato mixture you have). I added 1/4 cup of bread crumbs to about 5 small potatoes’ worth of mashed potatoes. Add as much salt and pepper as you like.
Heat up your skillet again, and coat the pan with olive oil. Drop three patty-size amounts of potato mixture into the skillet (about how many patties will fit in the pan at once), wait until the bottom is browned (aka crispy and delish!), then flip. Once the other side is browed, remove the patties. Repeat until you’ve used up all the potatoes. Serve with ketchup.
