Avocado Salad Quesadillas

Ingredients
  • 2 Tbsp. olive oil
  • 2 garlic cloves
  • 2 Tbsp. vegan cream cheese (try Tofutti brand)
  • 2 tortillas
  • 2 Tbsp. nutritional yeast (optional)
  • 1 avocado, peeled, pitted, and sliced
  • 2 cups salad mix
  • 1/4 cup vegan lemony salad dressing (I used Target brand Lemon Ginger Sesame Dressing.)
Instructions
  1. In a large skillet, heat the olive oil over medium heat and add the garlic cloves. Cook until golden brown and tender. Remove from the oil and set the pan aside (don't toss that oil!).
  2. Spread the vegan cream cheese evenly over the tortillas, then sprinkle with the nutritional yeast. Dice the garlic and sprinkle evenly on both tortillas.
  3. Place the avocado slices evenly on both tortillas, then fold the tortillas in half.
  4. Heat the reserved oil over medium-high heat. Add the quesadillas and cook until golden brown and crispy, about 2 minutes on each side.
  5. Toss the salad mix with the dressing.
  6. Cut the quesadillas in half and top with the salad mixture. Add extra avocado slices on top if desired.
  7. Enjoy!
Notes

This recipe is one of our faves because it's super-delicious and really easy to make. It's based off an avocado salad pizza from a popular restaurant near PETA's Bob Barker Building in Los Angeles. We wanted to recreate the delicious dish at home, and this spin on it is way cheaper and even yummier!
