Spicy Basil Tofu Kabobs

Ingredients
  • 1 lb extra firm tofu (pressed and drained)
  • 1 cup fresh basil
  • 2 Tbsp. soy sauce
  • 2 limes, juiced
  • 1 cucumber, sliced and peeled
  • 1 pint cherry tomatoes
  • 1 red onion, sliced
  • 2 Tbsp. olive oil
  • 1 Tbsp. red pepper flakes
  • 1 clove garlic
  • 1 package bamboo skewers
Instructions
  1. First, cut up your tofu into cubes and throw them into a re-sealable plastic bag.
  2. In a small bowl, combine olive oil, red pepper flakes to taste, garlic, lime juice, soy sauce and basil. You can eye it—but make sure you have enough to cover your tofu.
  3. Pour your marinade into the bag and set it aside. Leave it for a half an hour or as long as you can (throw it in the fridge if possible!).
  4. Next, cut up your cucumber into small crescents, and do the same with your red onion.
  5. Grab your skewers, and layer them with a cucumber, cherry tomato, a couple onion slices, and then a cube of your marinated tofu. Repeat until you have as many skewers as you like.
  6. Throw these babies onto the grill! I used a tabletop grill since I live in apartment (this thing is a NECESSITY for any dorm room!). You can pour the leftover marinade onto the grill as you cook, and once all of your veggies are showing those tried and true grill marks, serve them up with brown rice, noodles, or on their own.
