I’ve never been big on breakfast, mainly because having to deal with dirty dishes first thing in the morning isn’t too appealing. But because breakfast is the most important meal of the day, what I like to do is prepare something ahead of time and have it ready for those busy mornings when I hit the snooze button one too many times, my hair looks like it has been in a terrible accident, and I’m in a hurry to run out the door.

During times like this, I always turn to my handy-dandy and oh-so-delicious breakfast bars. You can make a batch one night and have breakfast covered for the rest of the week! They’re easy to eat in the car, during that super-boring math class, or just any time that you need a pick-me-up. I love munching on these before hitting the gym—what?! Sitting on a stationary bike while lip-synching to every song performed by the Glee cast is still considered exercise, right? 😉

Banana Breakfast Bars
1 cup rolled oats
1 cup oat flour (you can make your own by grinding up oats in your blender)
1/2 cup flaxseeds
1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 cup applesauce
1/2 cup peanut butter or almond butter
1/3 cup agave nectar or maple syrup
2 ripe bananas, mashed
1 cup dried fruit and nuts (optional)

  • Preheat your oven to 350ºF.
  • In a bowl, combine the rolled oats, oat flour, flaxseeds, baking powder, baking soda, and salt.
  • Add the applesauce, peanut or almond butter, agave nectar or maple syrup, bananas, and dried fruit and nuts, if using, and stir. The batter will look a little dry, but just keep stirring gently until all the ingredients are evenly mixed together.
  • Pour into a pan and press down evenly. Bake for 25 to 30 minutes.
  • Let cool and cut into bars.

Makes 10 bars

That’s it—super-easy and delicious! You can store these bars in an airtight container in the fridge and have breakfast ready for those busy mornings. 🙂
