You all know we LOVE food here at the peta2 office. That’s why we were super-excited to hear about Kerry, a dedicated peta2 member who has taken on the challenge of cooking her way through the entire PETA Vegan College Cookbook! Told you she was dedicated. 🙂 Oh, and she’s even documenting her journey on her foodie blog.
So it’s like Julie & Julia but without the dead animals and enormous amounts of fat in every dish. What’s not to love?
Since I’m obsessed with challenges (never again, cinnamon challenge—never again!) I asked Kerry to name her top three recipes so far. Check out her picks!
The Morning-After Scramble
Kerry: “It is a wonderful recipe. For a while there, I was looking for the perfect tofu scramble recipe, and I could have saved myself a lot of time if I’d just looked at this one. This is supposed to be a breakfast recipe, and I agree. It works great for breakfast! It also would work great for lunch, dinner, or a snack. It’s just scrumptious. My mother tried some before she went to work, and she said it was so delicious that she couldn’t stop thinking about it all day at work. For real, guys—this stuff is crazy-good.”
Broke-Ass Cinnamon Rolls
Kerry: “This is another breakfast recipe that could be eaten anytime. Or all the time, for that matter. I’m not even kidding. I made one and then proceeded to make two more because I just couldn’t get enough.”
Lazy Person’s Grilled Cheese
Kerry: “Even though this is a super-simple recipe, I don’t think I would have come up with it on my own. Why? Because I don’t think I would have thought to put pickles on a grilled cheese sandwich. And by ‘grilled,’ I mean microwaved. And by ‘cheese,’ I mean vegan cheese. Obviously. This was an absolutely AMAZING sandwich. I made one for my youngest sister, and she is so hooked. I think she’s eaten, like, 20. (OK, maybe I’m exaggerating a little bit. BUT STILL!) I think I could survive on these for a while if I had to. Really. I could. I cannot believe I’ve never thought to put pickles on a grilled cheese sandwich before, though!”
