Fajita Sweet Potato

Ingredients
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 1 yellow onion, chopped
- 2 sweet potatoes
- 1 cup corn
- 1/2 tsp. minced garlic
- 1/2 tsp. chili powder
- 1/2 tsp. paprika
Instructions
- Pierce the sweet potatoes with a knife or fork. Coat with 1 teaspoonful of the olive oil and sprinkle with the sea salt and pepper.
- Wrap in foil and bake for 45 minutes.
- Warm the remaining olive oil in a pan and sauté the bell peppers, onion, and corn until soft. Add the remaining ingredients and cook for 5 minutes, then let rest for 2 minutes.
- Slice open each potato and stuff with half the fajita mixture.
