The Ultimate Potato Salad

Ingredients
- 6 large potatoes, peeled and cut into 3/4-inch cubes
- 1 pkg. firm tofu, drained
- 1/3 cup vegan mayo
- 1 Tbsp. mustard
- 2 Tbsp. nutritional yeast
- 1 Tbsp. relish
- 1/2 cup sliced green onions
- 1 tsp. paprika
- 1 tsp. seasoned salt
- Salt and pepper, to taste
Instructions
• Fill a large pot with water, add the potatoes, and boil until tender. Drain and set aside to cool.
• Crumble the tofu into a large mixing bowl. Add the vegan mayo, mustard, nutritional yeast, relish, green onions, paprika, seasoned salt, salt, and pepper and mix well.
• Add the potatoes and stir until well coated.
• Enjoy!
