Ingredients

  • 1 cup brown rice, rinsed

  • 2 1/2 cups warm water

  • 1 cinnamon stick, plus a little more to decorate

  • 2 cups unsweetened almond or rice milk

  • 1 tsp. ground cinnamon, and a little more to decorate

Instructions

  • Combine the rice and warm water in a blender. Blend until the rice is finely ground.
  • Remove from blender and transfer to a container. Add the cinnamon stick, cover and refrigerate for 2 hours.
  • Remove the cinnamon stick and transfer the rice and water to the blender, process until smooth.
  • Strain the mixture, making sure to extract as much liquid as possible.
  • Return the liquid to the blender and add the almond (or rice) milk and ground cinnamon. Blend until smooth.
