Vegans pretty much always have a rainbow-colored palette of foods—aka “fruits and veggies”—at our fingertips. Plants have serious rainbow power! It’s easy to turn a smoothie orange with oranges or green with—you guessed it—greens. But there are other dope, simple, and au naturale tricks to turn your smoothies and other foods magical colors—full-on unicorn style—and we’re gonna share ’em with you. ? ?

Unicorn foods are everywhere, and vegan Instagrammers around the world are creating the most rainbow-tastic meals imaginable. Let’s hop on the sparkly, rainbow train to unicorn land together and check out some rainbow foodie fantasies.

Unicorn Noodles

I BELIEVE IN UNICORNS (and unicorn noodles). The craziest part is that they’re SO simple to make—all it takes is noodles, some red cabbage, baking soda, and lemons or limes. Magic, I tell ya. Don’t believe me? Try it for yourself.

Can a meal ever be to colourful? I threw myself a rainbowl lunch party because sometimes you just have to, but anyone's welcome to join!??. Featuring leftover sushi & a rainbow salad w/ a Indonesian Satay sauce and home grown flowers and herbs. • Which would you pick, Satay salad or unicorn sushi? Have a blessed day my friends ?? • One Love ? • • • #vegan #vegansofig #foodporn #letscookvegan #plantbased #vegetarian #whatveganseat #instafood #buzzfeast #glowlean #EatForThePlanet #foodie #unicornnoms #f52grams #yahoofood #bestofvegan #feedfeed #thekitchn #huffposttaste #foodandwine #foods4thought #allerhande #gloobyfood @thefeedfeed #flatlaytoday #ThriveMags #tastetherainbow #unicornnoodles #unicornsushi #sushi

Rainbow Pasta

Yes, you can dye regular ol’ pasta, too! No unicorns necessary—just some blue spirulina powder (which, BTW, is an all-natural colorant and antioxidant derived from straight-up algae—more on that later!).

"What a wonderful thought it is, that some of the best days of our lives haven't happened yet." . Bell peppers, edamame, broccoli, cucumber stars, spirulina quinoa pasta, crunchy purple sweet potato hearts, grape tomatoes, carrots, and tofu stars! Would have added tahini, but I'm all out. ? . No long captain today friends, I'm just too exhausted. Have a beautiful weekend. ❤ #vegan #whatveganseat #hclf #veganfoodie #veganfoodshare #vegangirl #eattherainbow #whole30 #wholefoods #tasty #vegetarian #beautifulcuisines #healthspo #healthyfood #plantbased #poweredbyplants #crueltyfree #veganeats #vegansofinstagram #veganlife #eathealthy #forksoverknives #starchsolution #veggies #foodphotography #rainbow #justvegan #bestofvegan #gloobyfood #feedfeedvegan

Here is the messy version of my rainbow dinner ??. Looks more like a bowl of toys than food if you ask me ?. But it was super yummy ? my brother and me ate it with tomato passata and nutritional yeast ?. Because some of you asked me how I coloured the pasta: Just cook your pasta as always (I used corn-rice pasta) and then put it in water with blue spirulina powder (add pitaya powder for the purple colour) for a few minutes. I used the powders from @rawnice ??. Have a nice evening everyone ? . . . . . . . . . #eattherainbow #rainbowveganparty #veganfoodshare #rainbowfood #kidsfood #foodforkids #foodart #veganbowls #thrivemags #fitnessfood #veganfitness #pasta #pastabowl #dinnerbowl #vegangains #eatclean #govegan #starchsolution #veggies #salad #eattogrow #foods4thought #f52grams #wholefoods #homemade #foodblogger #foodphotography #forksoverknives #meetupinmuenchen

Dreamy Summer Rolls

It’s easier to behold the beauty, power, and overall rainbowness of your plant-filled wraps when they’re rolled in translucent rice paper—very convenient.

Unicorn Smoothies

One day, I’m going to be one of those people who gets up early, makes the world’s most beautiful rainbow smoothie bowl, Instagrams it, and fully has her sh*t together. In the meantime, I’ll just scroll through my feed and look at photos like these:

Galaxy Bowls

OK, so basically smoothie bowls, but extra-stellar. Noted.

Unicorn Toast

Remember when toast used to be considered a bland and boring food?! Those days are DEAD. Just grab your pink pitaya powder or butterfly pea flower powder (scroll down for deets on these magical substances) and dye your favorite vegan cream cheese or yogurt—then spread ‘n’ swirl away on your canvas (in this case, a piece of dang toast). Don’t you just love being a vegan unicorn?

Don’t have toast? Rice cakes will do. ?

Want to recreate this magic at home, but aren’t sure how the heck to do it? Well, standard fruits and veggies will take you pretty far rainbow-wise, but some companies, such as Rawnice and Just Blends—which sell colorful plant-based superfood coloring powders—are making it super easy to make all your rainbow unicorn vegan foodie dreams come true, from the vivid blues to the bright pinks. Here are some tips for getting the dreamiest shades in smoothies and other foods:

Pinks

  • Pitaya powder: This vibrant superfood is made from pitaya—also known as dragon fruit—which is a yummy fruit known for its neon-pink skin and adorable black-and-white polka-dotted flesh and seeds.
  • Beetroot powder: Anyone who’s cooked a beet or even just eaten one knows how very magenta they are. While you can use puréed beets or beet juice to color foods, beetroot powder makes things even easier. Can you feel the beet? ?

Purples

  • Red cabbage: This is one of the basic yet magical ingredients in Unicorn Noodles, which are about to become your latest obsession—if they’re not already.
  • Butterfly pea flower powder: This magically color-changing powder goes from blue to purple, so it’s in both categories. Find out all about it below.

Blues

  • Butterfly pea flower powder: Yes, it’s made from a flower, ’cause we’re just a bunch of unicorn fairies over here and that’s what we dye our food with. Butterfly pea flowers are usually made into a tea, but it also turns food a brilliant blue color and transforms into purple if you add something acidic, like lime or lemon.
  • Blue spirulina: Spirulina—fun to say and even more fun to dye foods with. This powder is derived from blue-green–colored algae and is also a powerful antioxidant (as if the power to rainbow-ify your food wasn’t reason enough to use it).

Greens

  • Matcha green tea powder: Matcha is energizing and full of antioxidants. Add it to smoothies or other foods to achieve a rich, pastel-green hue.
  • Spirulina: This is the regular version of the vividly colored algae, which will give a beautiful green hue to your nice cream or other foods (and a health boost, too).

Happy Monday morning ✨? I'm starting my green Monday with this vanilla lime nice cream topped with dragonfruit, coconut & finger limes @citriburst.pearls from @shanleyfarms ? this is the first time I've tried finger limes and you may have seen my story the other day but they come out like little bubbles and are lovely in flavour. I cut them into slices here just to show you how tiny and cute they are but I don't think the skin is edible, I just popped out the insides to top. I couldn't decide if I liked the colour of my smoothie bowl today, I feel like it looks borderline nuclear ? recipe -1 frozen banana -1/3 cup frozen cauli -1/4 cup frozen spinach -1/4 cup frozen peas -1/3 cup mylk -half vanilla bean pod scraped -pinch of spirulina to one half reserved then swirled in to make a deeper green ✨ #veggiekins #vegansofig #thefeedfeedvegan #vegansofny #vegansofnyc #rawtillwhenever #beautifulcuisines #wfpb #wellnessblogger #vitamix #glutenfree #bestofvegan #unicornfood #wholefoodsfaves #foods4thought #veganbowl #rawvegan #healthycuisines #smoothiebowl #nicecream #f52grams #fingerlime #rawfood #greenjuice #flatlay #eattherainbow #tcmlivingwell #greenmonday #meatlessmonday

Yellows

  • Turmeric powder: You probably have this sitting in your spice cabinet right now. This super-healthy root has an intensely bright yellow color and has been used as a dye for centuries.
  • Mango: If you’re looking for a gorgeously rich-colored yellow smoothie that tastes like a creamy tropical dream, look no further than mango!

Blacks and Grays

  • Activated charcoal: Sick of all these rainbows and ready to embrace your dark side? Well, eating charcoal might sound a little f’d up, but activated charcoal is actually a super detoxifying supplement that can turn your foods into every anti-rainbow shade of gray and black. We get it—full-time unicorn life isn’t for everyone.

Black Ombré Chia Parfaits ? Only because I'm excited to be growing black violas. So I thought it was time to update my ice blue Parfait with a black grey version ? What do you think about black food? This is coloured using @just_blends Activated Coconut Charcoal Powder. Detox and white teeth all in one Parfait ? Happy Friday from Oz ? ? Black Ombré Chia Parfait 2 Tbsp black chia seeds 1 cup coconut water @naturalrawc 1 cup yoghurt 1/2 tsp vanilla extract 1 Tbsp granulated stevia (to taste) @natvianaturalsweetener 1/4 tsp activated coconut charcoal powder @just_blends Place the Chia seeds in a jar and slowly stir in the coconut water to desired consistency, add the vanilla, stevia and charcoal powder Divide Grey layer – Add some yoghurt and stir through Top with remaining plain yoghurt and fruit as desired . . . . . #parfait#wholefoods#kaleNit#foods4thought#beautifulcuisines#onthetable#heresmyfood#chiapudding#bbgcommunity#vegan#whatveganseat#feedfeed#nourish#gloobyfood#foodie#foodphotographer#buzzfeedfood#huffposttaste#inthekitchen#vegansofig#veganfoodshare#veganism#rawfoods#dairyfree#vscofood#f52grams#foodphotography @food52 @thefeedfeed #detox @bestofvegan #plantbased
