Green Chile Quesadilla
- 2 tortillas
- 1/2 cup vegan cheese (try Follow Your Heart Fiesta Blend Shreds)
- 2 Tbsp. canned diced green chiles
- Cayenne pepper, optional
- Avocado, optional
- Warm a pan on the stove over medium-high heat.
- Place one tortilla in the pan, sprinkle with the cheese, and add the green chiles. Add the cayenne pepper and avocado, if using. Cover with the remaining tortilla and cook for a few minutes, or until the cheese has fully melted, flipping halfway through.
