Polenta and Veggies

Ingredients

  • 6 cups water
  • 3 Tbsp. vegan margarine
  • 2 cups cornmeal
  • 1 Tbsp. olive oil
  • 1/4 red onion, chopped
  • 1/2 red bell pepper, chopped
  • 1 cup canned pinto beans
  • 1 cup canned black beans
  • 1/4 tsp. garlic powder
  • 1/4 tsp. onion powder
  • 1/4 tsp. spicy paprika
  • 1/4 salt
  • 1/4 pepper

Instructions

  • Bring the water and salt to a boil in a large pot.
  • Add the margarine, gradually stir in the cornmeal, and let simmer, stirring often, for about 30 minutes.
  • Heat a pan and add the olive oil.
  • Combine the red onion, bell pepper, beans, and seasonings in the pan and saut√© for about 5 minutes.
  • Remove the polenta from the heat and serve topped with the beans.

Makes 6 servings
