Polenta and Veggies

Ingredients
- 6 cups water
- 3 Tbsp. vegan margarine
- 2 cups cornmeal
- 1 Tbsp. olive oil
- 1/4 red onion, chopped
- 1/2 red bell pepper, chopped
- 1 cup canned pinto beans
- 1 cup canned black beans
- 1/4 tsp. garlic powder
- 1/4 tsp. onion powder
- 1/4 tsp. spicy paprika
- 1/4 salt
- 1/4 pepper
Instructions
- Bring the water and salt to a boil in a large pot.
- Add the margarine, gradually stir in the cornmeal, and let simmer, stirring often, for about 30 minutes.
- Heat a pan and add the olive oil.
- Combine the red onion, bell pepper, beans, and seasonings in the pan and sauté for about 5 minutes.
- Remove the polenta from the heat and serve topped with the beans.
